Mon Timmy (le doux nom de mon ThermomixÂź) a Ă©tĂ© un vĂ©ritable alliĂ© dans la prĂ©paration de ce repas. Il mâa permis dâanticiper, de mâorganiser et de gĂ©rer les cuissons avec beaucoup plus de sĂ©rĂ©nitĂ©, surtout au cĆur de lâeffervescence des fĂȘtes. GrĂące Ă lui, jâai pu me recentrer sur lâessentiel : le plaisir de cuisiner, les saveurs, les textures et les moments de partage, sans stress ni prĂ©cipitation. Il mâa aussi offert du temps pour moi, que jâai choisi de passer sur un 9 trous de golf, une parenthĂšse qui a rendu cette journĂ©e encore plus agrĂ©able. Pour un repas de NoĂ«l comme celui-ci, câest un assistant dont je ne pourrais plus me passer.
Pendant longtemps, âsans lactoseâ a rimĂ© avec frustration, restrictions et plats fades. Et pourtant⊠il suffit dâun peu de crĂ©ativitĂ© pour prouver exactement le contraire.
Cette annĂ©e, jâai donc dĂ©cidĂ© de composer mon repas de NoĂ«l sans lactose, sans compromis sur le goĂ»t ni sur lâesprit festif. Jâavais envie dâun menu gĂ©nĂ©reux, rĂ©confortant, qui donne envie et qui ressemble Ă un vrai repas de fĂȘte, celui que lâon partage et dont on se souvient.
Pour lâentrĂ©e, jâai choisi une assiette terre-mer composĂ©e de foie gras maison, de queue de langouste accompagnĂ©e dâaĂŻoli, et de pain complet cocotte. Une entrĂ©e lĂ©gĂšre mais pleine de caractĂšre, qui annonce la suite du repas.

Le plat principal est celui que lâon attend avec impatience.
une pintade parfumĂ©e au combava, subtilement acidulĂ©e, accompagnĂ©e de lĂ©gumes grillĂ©s (broccoli, pomme de terre (dĂ©coupĂ©e en torsades et carottes en battonnets) , fondants Ă lâintĂ©rieur et lĂ©gĂšrement croustillants Ă lâextĂ©rieur. Un plat simple en apparence, mais riche en goĂ»t, qui donne immĂ©diatement une ambiance de fĂȘte.

Pas de crĂšme, pas de beurre, pas de fromage, pas de lait mais des saveurs franches, une cuisson maĂźtrisĂ©e et des produits qui parlent dâeux-mĂȘmes.
Et parce quâun NoĂ«l ne serait pas vraiment NoĂ«l sans dessert, jâai terminĂ© le repas avec un tiramisu glacĂ© sans lactose. CrĂ©meux, frais et gourmand. Personne ne devine quâil est sans lactose⊠sauf si je le dis.

Ce menu de NoĂ«l sans lactose est ma façon de montrer que manger sans lactose ne veut pas dire renoncer au plaisir, mĂȘme â et surtout â pendant les fĂȘtes. Câest exactement ce que je recherchais : un repas que lâon savoure lentement, que lâon partage, et qui prouve quâon peut se rĂ©galer sans lactose, sans frustration.

For a long time, âdairy-freeâ was associated with frustration, restrictions, and bland food. Yet with a little creativity, itâs easy to prove the opposite. This year, I decided to create my own dairy-free Christmas meal, without compromising on flavor or the festive spirit. I wanted a generous, comforting dairy-free holiday menuâone that truly feels like a celebration, the kind of meal you gather around, share, and remember.
To start this festive dairy-free Christmas menu, I served a land-and-sea platter with homemade foie gras, lobster tail with aioli, and rustic whole-wheat Dutch oven bread. Light yet full of character, it sets the tone for a refined and indulgent holiday meal.
The main course is the dish everyone looks forward to: guinea fowl scented with makrut (kaffir lime), delicately tangy and aromatic, served with grilled vegetables that are tender on the inside and lightly crisp on the outsideâbroccoli, spiral-cut potatoes, and baton-style carrots. A dish that looks simple but delivers rich, well-balanced flavors and instantly creates a festive atmosphere. No cream, no butter, no cheese, no milkâjust careful cooking, bold seasoning, and quality ingredients that speak for themselves.
And because Christmas wouldnât feel complete without dessert, I ended the meal with a dairy-free frozen tiramisu. Creamy, refreshing, and indulgent, itâs the kind of dessert no one guesses is dairy-free⊠unless I mention it.
This dairy-free Christmas meal is my way of showing that eating without dairy doesnât mean giving anything upâespecially during the holidays. Itâs exactly the kind of food I wanted: meant to be enjoyed slowly, shared with others, and proof that you can eat well, celebrate fully, and avoid dairy without frustration.
